Peanut Butter and Carrot Cake for Dog

  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon (optional)
  • 2 large eggs
  • ½ cup unsweetened apple sauce or mashed banana
  • 1 cup grated carrots
  • ½ cup natural peanut butter (unsweetened, with no xylitol)
  • ¼ cup vegetable oil or coconut oil
  • ½ teaspoon vanilla extract (optional)
  • ½ cup low-sodium chicken broth or water
  • A pinch of sea salt (optional)

Instructions

1. Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease a 6-inch round cake pan or line it with parchment paper to prevent the cake from sticking.

2. Mix Wet Ingredients:

In a large mixing bowl, whisk together the eggs, apple sauce (or mashed banana), peanut butter, vegetable oil (or coconut oil), and vanilla extract (if using). Mix well until smooth and combined.

3. Add Dry Ingredients:

In a separate bowl, combine the whole wheat flour, rolled oats, baking powder, and cinnamon (if using). Stir to evenly distribute the dry ingredients.

4. Combine Wet and Dry Ingredients:

Gradually fold the dry ingredients into the wet mixture. Mix until just combined—be careful not to overmix, as this can affect the texture of the cake.

5. Add the Carrots:

Fold the grated carrots into the batter, making sure they’re evenly distributed throughout the cake mixture.

6. Add Liquid:

Slowly add the chicken broth or water to the batter to achieve a smooth, pourable consistency. You may need to adjust the amount depending on your flour and oat type.

7. Pour into Pan:

Pour the batter into the prepared cake pan and use a spatula to smooth the top into an even layer.

8. Bake the Cake:

Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Keep an eye on the cake after 30 minutes to prevent overbaking.

9. Cool the Cake:

Allow the cake to cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely.

10. Cut and Serve:

Once the cake has cooled completely, slice it into appropriate-sized portions for your dog. Remember, smaller dogs will need smaller portions, while larger dogs can enjoy bigger slices. You can also cut it into smaller bite-sized treats for easier serving.
